Restaurante Lilium

Lilium looks over Marina Lanzarote in Arrecife, combining a dining room and terrace with a kitchen devoted to contemporary Canarian food. Orlando Ortega and Sandra Guadalupe founded the restaurant in 2006, with Orlando leading the cooking and Sandra directing the dining room. Vegetables and fruit grown in volcanic soil, fish and shellfish from the islands' coasts, and selected meats provide the starting point. The kitchen draws on familiar island recipes while changing their presentation and combinations. Guests can choose between two tasting menus and a menu in which each diner selects a starter, main course and dessert. The longer Bruno sequence includes banana croquette, asparagus with scarlet prawn and apple, a fish sandwich, roast avocado, octopus with boiled mojo, fish and rabbit before dessert. Laura offers a shorter route through several of those ingredients. The selectable menu includes coastal noodles with Lanzarote scarlet prawns, stuffed rabbit leg with sweet black pudding and apple, and aged beef with almogrote and roasted pepper. Desserts continue the island theme with quesillo, gofio ice cream and tropical fruit. The tasting menus are served without substitutions; diners with allergies, intolerances or dietary restrictions are directed toward the selectable menu, where adaptations are easier. Alongside its cooking, the restaurant describes practical commitments to local purchasing, recycling, reducing plastics and renewable energy. Its marina setting places the water in view from the terrace, giving the meal a distinct connection to Arrecife's waterfront.
